Drying does something remarkable to ginger: as the fresh rhizome loses water, its warming compounds concentrate and deepen — the gingerols of fresh ginger transform into the shogaols that give sunth its lasting, spreading heat. A pinch of sunth carries what a whole knob of fresh ginger would.
